Founded in the 1930s amidst the vineyards and fields of Salgareda (TV), just steps from the
Piave river, Le Marcandole takes its name from the local dialect for a freshwater fish known
for its delicate, white flesh. This fish, called marcandola in the region, is known elsewhere in
Italy as “striped” or “strip fish”, perfectly adapted to the river’s rocky habitat.
Initially a grocery store, then, from the 50s, a bar and trattoria already known for its delicious
dishes and in particular, fish fritters. The real changes occurred only in the 90s under the
Rorato family. Their passion and creativity elevated Le Marcandole into a landmark of high
quality food and wine in northeastern Italy, celebrated for its fish focused menu and
impeccable standards. Over the time, the restaurant has earned both critical acclaim and the
loyalty of its guests.
Today Roberta Rorato leads the restaurant with meticulous care, ensuring every detail
contributes to an exceptional dining experience. She and her skilled, attentive team strive to
meet the different needs of their guests, creating a warm and welcoming atmosphere.
Over the years, significant renovations have been carried out to renew and improve the
facilities. The kitchen, designed with cutting edge technology, is displayed to delight clients
with a “culinary theater” experience. The design not only engages diners but also inspires
the chefs, who become performers in the process.
In 2023, Le Marcandole celebrated the 30th anniversary under the Rorato family with a
comprehensive redesign. This ambitious project, led by Visual Display of Udine in
collaboration with Studio Torresan Associati and many local artisans, recreated the space as
a sophisticated and luxurious gourmet destination. The renovation of the geometries
introduced natural tones, high quality materials with impressive design elements, including a
sculptural fireplace and unique wall sculptures by Sara Bertolini. The integration of wall
panelling created a seamless space between the kitchen and dining areas, blending beauty
and harmony while adding a touch of intrigue for a “wow” effect. The entrance has also been
completely renovated, along with the existing rooms and wine cellars. Outdoor, a bioclimatic
pergola now ensures comfort in every season, while the exterior landscaping crafted with the
intervention of De Zottis SpA, a company specialised in designing gardens and parks,
reflects the natural beauty of the region. The thoughtfully designed garden, featuring the
river vegetation with a wise mix of perennials, flowering shrubs and aromatic plants,
harmonize beautifully with the surrounding environment, creating an inviting embrace for
guests.
The same care and attention that is breathed in the setting of the rooms are applied, in an
incessant search for perfection, to the realization of the dishes. Each dish is the result of
careful research rooted in two main inspirations: the classical flavours of the region's history,
and the cutting edge techniques of modern cuisine.
Through this fusion, original creations emerge: a balance of tradition and innovation,
enhancing the aromas and the freshness of the ingredients, while honoring and enhancing
the gifts of the sea, the river and nature in their seasonality.
