Waldemarro Leonetti was born in Chieti on 9 July 1989, embraced by the mountains of Ampezzo and now resides in the Treviso countryside.
"Before beginning my journey at Marcandole in 2017, I gained valuable experience working
with important establishments in Cortina.
Love brought me to the plains, where I now oversee the kitchen, supported by my team. I
can express my modern interpretation of fish cuisine, using excellent local products, from
seafood to vegetables.
Our approach highlights the simplicity of authentic flavours, free from rigid paradigms.
Guided by tradition, we aim to maximize the potential of each main ingredient, prepared
using classic techniques. These are elevated through the careful combination of secondary
ingredients, creating a harmonious balance in every dish.
My passion for this work began in my grandmother’s kitchen, surrounded by the warmth of
her cooking. From her, I learned how to bring taste to life. ”
